Our Angus is USDA Certified as well as being naturally raised without antibiotics or hormones in the Northern Midwest. The USDA grading system is based on the quality of the marbling and maturity. It signifies the best combination of flavor (related to marbling) and tenderness (related to maturity). Santana Row serves only USDA Certified Prime Angus and hand cut our steaks in our butcher shop.
Wagyu is a Japanese cattle breed genetically predisposed to intense marbling. In terms of BMS
Scores, which measure the level of marbling, Prime Angus ranges from 5 to 7, while Wagyu ranges from 8 to 12. This is why Wagyu is considered Beyond Prime.True Japanese Wagyu is referred to as the prefecture where it is raised, such as Kobe,Matsusaka or Ohmi.

Martin Emigh is a 4th generation lamb producer in Solano County. Martin and his daughters,Catie and Sarah, raise their lambs on non-irrigated hill ground and irrigated all natural pastures.
All their lambs are grown naturally.
